Ingredients
- Cooked Black Beans: You can use canned black beans for convenience; just remember to drain and rinse them well. If you have time, my Slow Cooker Black Beans are fabulous here.
- Red Pepper: This vibrant veggie adds a splash of color and a sweet crunch. Dice it up to blend seamlessly into the mix.
- Red Onion: This gives our dish a bit of a kick! The sharpness of the red onion contrasts beautifully with the sweetness of some of our other ingredients.
- Poblano Pepper: A mild chili pepper that brings a hint of heat without overwhelming the palate. If you can't find a poblano, a green bell pepper makes a great substitute!
- Mango: Sweet, juicy, and tropical. The mango really amps up the flavor profile and pairs wonderfully with the heat from the peppers.
- Fresh Cilantro: Adds a burst of fresh, herbaceous flavor. If you're one of those folks who find cilantro tastes like soap (it's a genetic thing!), fresh parsley can be used instead.
- Orange Juice: Just a tablespoon, but it helps to brighten up the whole dish, enhancing the sweetness of the mango and balancing the tang of the vinegar.

Step by Step
- Combine black beans, red pepper, red onion, poblano pepper, mango, and cilantro in a medium-sized bowl.
- In a separate bowl, whisk together orange juice, rice vinegar, and olive oil.
- Pour the dressing over the black bean mixture, then stir well.
- Just before serving, toss with avocado.

Ingredients
- 1 ½ cups cooked black beans drained and rinsed (1 can)
- ½ red pepper diced
- 1//2 medium red onion diced
- 1 poblano pepper diced
- 1 cup diced mango
- ⅓ cup chopped fresh cilantro
- 1 tablespoon orange juice
- 3 tablespoons rice vinegar

- ½ avocado diced
Instructions
- In a medium bowl combine black beans, red pepper, red onion, poblano pepper, mango and cilantro.
