Today I had an amazing day with my Skye and my Mom. It is rare to get some “girl time” and with the craziness of school starting back for the boys, I was so grateful to get the chance to hang out with them. Nothing complicated mind you. We just went out to lunch and then to Walmart to pick up something quick for dinner. (And of course, some school stuff for the boys.)
Too often when things get hectic, a family dinner is the first thing to go.
On days where time is tight, I have a few tricks up my sleeve to make sure our evening meal doesn’t consist of take out. One of them is Tyson® Grilled and Ready® Chicken Breast Strips. They make creating a healthy meal easy. My kids will happily eat them as is, or if I’ve got few minutes I love to get creative without the pressure of having to cook an entire meal from scratch. On of my favorite things to do is use my food processor to chop up some veggies, make a quick sauce and put everything out for everyone to make their own wraps. Today’s Chicken & Feta wraps are a perfect example of a 15 minute meal.

Grilled Chicken & Feta Wraps with Lemon Tahini Sauce
1 package Tyson® Grilled and Ready® Chicken Breast Strips
1 red onion, sliced
1 tomato, seeded and diced
2 cups cabbage, shredded
3 ounces feta cheese, crumbled
12 Gluten Free Tortillas (fewer if yours are large)
Lemon Tahini Sauce
3 cloves garlic, minced
1/4 cup chopped chives
1/2 cup tahini
3 tablespoons tablespoons lemon juice
1/2 cup water
2 tablespoons nutritional yeast
1 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
Make sauce by combining garlic, chives, tahini, lemon juice, water, nutritional yeast, salt, pepper and cayenne in a blender. Process until smooth.
Heat chicken according to package directions.
Meanwhile, heat tortillas over medium heat. Add chicken, onion, tomato, cabbage and feta. Drizzle with sauce and roll up, securing with a toothpick if desired.
