With three picky kids, having to pack lunch can be a little stressful.

I remember watching Peanuts clearly when I was a kid.
And of course, reading the comics on Sunday Mornings. I was so Peanuts obsessed that when I was in college I got a Beagle and named her Snoopy. I’m pretty sure that the “real” Snoopy was supposed to be a boy, but my Snoopy never seemed to mind. (Probably because she was so spoiled that she slept in my bed with her own water glass on the bedside table. True story.)
We will be taking the kids to it – it is going to be Skye’s first in-theater movie, and I’m so looking forward to it. You can check out the trailer here.

Alex loves Horizon®’s chocolate milk boxes while Christian and Skye like the vanilla. I love that it has 8 grams of protein per box and is an excellent source of calcium. Alex refuses to eat fruit with any slight bruising and I’ve found that packing fruit and then giving it to a 10-year-old boy to transport is simply a waste of money. You know what else I love? This Kid Friendly Gluten Free Veggie Pasta salad! It is made with quinoa penne and packed with veggies. Paired with Horizon® milk boxes and Super Squeeze Fruit Pouches it is a lunch my kids love.

- 8 ounces quinoa penne
- 1 cup broccoli florets
- 1 red pepper, diced
- 1 cup grape tomatoes, quartered
- 2 carrots, julienned
- 3 pieces Horizon® string cheese, chopped
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- 3 tablespoons honey
- 1 clove garlic, minced
- 1 tablespoon dijon mustard
- 1 teaspoon sea salt
- 1/4 teaspoon fresh ground black pepper
- Cook pasta according to package directions, adding in the broccoli in the last 2 minutes of cooking. Drain and rinse with cold water. Transfer to a large bowl.
- Add red pepper, grape tomatoes, carrots and string cheese to the bowl.
- Make the dressing by combining vinegar, olive oil, honey, garlic, dijon, salt and pepper in a blender. Process until smooth. Toss with pasta and veggies and serve chilled or at room temperature.
