Ingredients
- Refried Beans: Use your favorite brand of canned refried beans or make your own.
- Salsa: Whether you prefer mild, medium, or hot, salsa is your ticket to customizing the dip's heat level.
- Sour Cream: There are some fantastic non-dairy sour creams on the market that blend seamlessly into the dip if you are dairy -free.
- Chili Powder: Ancho chili powder is a milder option that also works well.
- Smoked Paprika: Speaking of smokiness, smoked paprika brings a gentle, aromatic smoke that complements the chili powder beautifully.
- Cumin: With its earthy, slightly bitter essence, cumin grounds the dip and ties all the flavors together.
- Cream Cheese: Whether you opt for the dairy version or explore the growing variety of non-dairy alternatives, it's all about achieving that velvety texture.
- Shredded Cheddar or Daiya: Dairy lovers can go with a classic cheddar, while those avoiding dairy can reach for Daiya or another plant-based cheese for a similar effect.
Tips and Tricks
- Stir Occasionally: If you're around, give the dip a gentle stir once or twice during cooking. This helps distribute the heat evenly, ensuring that there are no burnt edges.
- Customize Your Creaminess: Depending on how creamy you like your dip, play around with the amount of cream cheese and sour cream. Starting with the recipe’s suggestion is a good baseline, but don’t be afraid to adjust to your heart’s (and taste bud’s) content.
- Keep It Warm: One of the best things about using a slow cooker is that it can keep your dip warm throughout the party. Just switch it to the "warm" setting after cooking. No more worrying about serving cold bean dip to your guests!
- Dippers Galore: Sure, tortilla chips are the classic go-to, but why not expand the horizons? Pita chips, sliced baguette, or a rainbow of fresh veggies can all take your dip experience to new heights.

My daughter is always bugging me to make a cheesy bean dip that tastes GREAT (yes, that's right, most of my bean dips so far have been pretty lame) so I cannot wait to give this a try! Thanks Wendy! Happy Friday!
