I’ve mentioned before that when we take road trips we almost never eat out. Yes, we will have an occasional meal in a carefully scouted out location. But for the most part, road trips just aren’t the time to take the chance of getting glutened. More than once I’ve found myself sick and miserable in the middle of nowhere.
Since this isn’t an experience I care to repeat, I’m now much more careful about planning ahead.
Because we often take very long trips, I’ve learned that it just isn’t possible to pack enough sandwiches and salads and not have them get waterlogged and mushy before the last day.
What does work though is packing both a cooler and a bin filled with everything I’ll need to cook up a meal in the hotel room. In the bin goes my trusty griddler and my small blender. This means we’ve got a warm meal at night (usually quesadillas or hamburgers) and smoothies for breakfast.
Generally I prefer to eat my calories, but on the road a smoothie really hits the spot.
Today’s smoothie is one that is great for the whole family. Typically, I will leave the protein powder off of the kids smoothies and instead substitute additional almond butter. Since Alex doesn’t eat bananas, I usually make his with strawberries.
Almond Butter Banana Quinoa Smoothie
- 2 tablespoons quinoa flakes
- 1 cup almond milk
- ½ banana peeled and sliced
- 1 tablespoon natural almond butter
- 1 scoop protein powder optional
- Stevia to taste (optional)
- Place all ingredients in a blender and process until smooth. Add ice if desired.
