When I was a kid, there were certain foods I would dread.
Butter Beans for one. My mom would cook them until they were mushy, and my sister and I would see who could sneak ours off to the bathroom for a ceremonial flushing to avoid having to eat them.
Anything with dates was also up there on my most dreaded list.
I’m not sure if I hated dates or just the idea of them, but I’m so grateful that I gave them another chance.
Without them, I wouldn’t have these wonderful Coconut Quinoa Date Snowballs!
These are a simple to make vegan dessert that will leave you with zero guilt. Isn’t it amazing when you find things that can satisfy your sweet cravings that are also healthy?
Coconut Quinoa Date Nut Snowballs
- 3 tablespoons unsweetened shredded coconut
- 5 ounces pitted dried dates
- ½ cup cooked quinoa
- ¼ cup raw almonds
- 1 tablespoon coconut palm sugar optional
- ½ teaspoon cinnamon
- ½ teaspoon vanilla
- 1/8 teaspoon sea salt
- Place coconut in a shallow dish. In a food processor combine dates, quinoa, almonds, sugar, cinnamon, vanilla and sea salt. Process until smooth. Form into very small balls, about a ½ teaspoon in size. Roll the balls in the coconut pressing to coat as needed.
