The weather is getting really warm here, and to be honest, nothing could make me happier. We are still at the beach, and I am trying to savor the last days for the season.

Pretty soon, we will be headed to the mountains for the summer. Although I will miss home, I won't miss the crowds that come with spring and summer and I am looking forward to a new adventure.

Right now, it is taking everything I have to savor every day. When a big trip is ahead, it is so easy for me just to focus on the future and let days pass.

A few days ago I took Skye to the park. The air was perfect and I could smell the scent of flowers in the distance. I pushed her on the swings and I enjoyed the sound of her giggle.  My girl could swing all afternoon.

It's crazy to think that she is already four. Feels like tomorrow I will be sending her off to college.

But thankfully that day is still far away. Summer however, is just around the corner.

Gluten Free Cauliflower Recipes
When summer is here and the weather is hot, I like to keep meals packed with veggies.

One way I this is by using veggies in place of meat.

It's a sneaky way to get Skye to eat enough veggies, but hey, it works!

This year I have vowed to use more Cauliflower. It is a super affordable veggie that if you follow me on Facebook, you know how obsessed I have become with it.
