We had such a good week celebrating our little girl. She has such a big personality and loved every moment of it.
I’ve tried to keep things simple – instead of a big gift we just loaded up on things like bubbles, paints, balloons, water toys and play-dough. We so much fun making and decorating them! They especially loved dipping the little sandwiches into the sprinkles.
I cherish the memories with them almost as much as seeing her reaction to them.

The minute she saw them when she woke up from her nap she screamed “party” and went to get her party hat. (She has insisted that we wear these hats all week.)

Gluten Free Chocolate Chip Ice Cream Sandwiches
- 1 box Pillsbury™ Gluten Free Premium Chocolate Chip Cookie Mix
- Vanilla Ice Cream
- Make cookies according to this recipe. Allow to cool COMPLETELY. (I put mine in the fridge to make sure they were completely cool.)
- Put a large spoonful of ice cream on one cookie and top with another. Place sprinkles in a small bowl and dip the edge of the sandwiches in the sprinkles. Transfer to a plate lined with parchment paper and store in freezer.
