Ingredients
- Olive Oil: The heart of the Mediterranean in your kitchen. No olive oil? Avocado oil is a great alternative.
- Coconut Aminos or Gluten-Free Tamari: Soy sauce works too, if you're not avoiding gluten.
- Red Wine Vinegar: It's the zesty splash that adds a touch of acid. Swap in apple cider vinegar for a twist if needed.
- Minced Garlic: Garlic powder can fill in.
- Cherry or Grape Tomatoes: Look for tomatoes that are ripe, but not overly ripe for best results.
- Red Onion: For that crisp bite and pop of color. No red onion? Shallots are an elegant alternative.
- Zucchini: These, of course, are yet another component. Out of zucchini? Bell peppers or eggplants are fabulous subs.
- Smoked Sausage: Brings the smoky, savory edge. Chicken sausage or even a veggie link can swap in for a lighter twist.
Step by Step
Soak skewers for 20 minutes in warm water.
Combine olive oil, coconut aminos, red wine vinegar, and garlic. Season with salt and pepper.
Place tomatoes, onion, and zucchini in a bowl and pour the marinade over them. Let rest for 30 minutes.
Preheat your grill to medium heat and oil the grate.
Drain your vegetables, then thread together your vegetables and sausage on the skewers.
Grill kebabs until each bite is perfectly cooked and veggies tenderly embrace the heat, typically 7-10 minutes per side.
Tips and Tricks
- Choose Your Sausages Wisely: Not all sausages are created equal. Opt for high-quality brands that are known for their flavor and texture. This will make a huge difference in your final dish.
- Veggie Variety: Don't limit yourself to just bell peppers and onions. Think zucchini, squash, cherry tomatoes, mushrooms, or even pineapple for a sweet twist!
- Marinate for Flavor: Marinating your sausages and veggies can take your kebabs from good to great.
- Soak Those Skewers: If you're using wooden skewers, remember to soak them in water for at least 30 minutes before grilling. This prevents them from burning on the grill.

You had me at kabob. I love grilled veggies and meat. My dad taught us girls how to cut grass, use tools, drive stick, and fire up the grill. Man did I complain like a brat but I am glad I have those skills now!

This looks delicious! I like that the sausage uses Wisconsin cheese. I bet that gives it some wonderful flavor.
