As a self-confessed chip lover, I've often found myself in a bit of a conundrum.
You see, while my palate yearns for the salty, crunchy goodness of chips, my conscience reminds me of their not-so-healthy attributes. The compromise?
Oven Baked Rosemary Potato Chips. Trust me, they're a game-changer. Not only do they satisfy my cravings, but they also let me feel good about what I'm snacking on.
The journey of creating these chips has been nothing short of delightful. I remember the first time I made them; I was skeptical if anything could match up to the deep-fried chips I so loved.
But as I sliced the potatoes thin and sprinkled them with rosemary, an aromatic herb that adds a unique twist to the classic chip flavor, I could sense something special was about to happen.
Fresh out of the oven, these chips were golden perfection - crisp, flavorful, and undeniably addictive. And the best part? They're perfect for dipping!

Ingredients
- Russet Potatoes: These potatoes are the main ingredient and are sliced thin. If you want to try something a little different, feel free to use sweet potatoes or even purple potatoes.
- Olive Oil: Olive oil (regular; not extra virgin) causes the potato chips to not stick, as well as makes them brown better. You can also use avocado oil or grapeseed oil if that's what you have on hand. They both have high smoke points which makes them great for baking.
- Fresh Rosemary: One of the key ingredients to our potato chips, rosemary adds a strong flavor that cannot be acquired anywhere else. No fresh rosemary? Dried rosemary will suffice, however dried herbs are more potent, so you'll need less.
- Garlic Powder: This adds an extra layer of flavor. Feel free to omit if you are not a fan.
- Salt: It strongly enhances the flavor. Feel free to use kosher salt, sea salt, or even a flavored salt like garlic or rosemary salt for extra punch.
Step by Step
- Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and spray it with oil.
- Place your potatoes in a large bowl and add olive oil, rosemary, garlic powder, and salt—then toss them together.
- Arrange the potatoes in a single layer on a baking sheet.
- Bake for 8 minutes. Then flip them over and bake for another 5–8 minutes, keeping a close eye on them.
Tips and Tricks for Perfect Baked Potato Chips
Here are some handy tips to help you make the perfect batch of baked potato chips. Let's turn you into a potato-chip master!
- Slice Thin for the Win: To achieve that ultimate crispiness we all crave in a potato chip, the key is to slice your potatoes as thin as possible. Using a food processor or mandoline slicer can ensure that perfect, paper-thin cut.
- Watch Out for Burnouts: Now, if you're successful in getting those super thin slices, remember to keep a sharp eye on them while baking. They can easily burn due to their thinness. So, stay attentive!
- Flavor Flexibility: This recipe is just a starting point. If rosemary isn't your thing, don’t worry! Feel free to experiment with different flavorings and seasonings. From classic salt and vinegar to spicy barbecue, the flavor possibilities are endless.
- Family Fun: Making these chips can be a fun family activity. Get the kids involved (with supervision, of course) or let them choose the flavors. It's a great way to spend some quality time together in the kitchen.
Storing
Store them in an airtight container or bag at room temperature. They will stay fresh for up to 2 days.

I am wondering if there is a way you could make a webinar that could be accessed by us PT working people in WA as we are on PST and most of your activities take place on EST which is during the time I am working and it is not beneficial to be watching anything on my employer's computer. I work as I get free lodging and utilities and that helps a lot on a limited Soc Sec income. I have been self-employed before and there are a lot of venues to be able to exhibit these oils, etc at in this PNW area. I have gone to Facebook to see comments from last FB event, but that doesn't give me the full scoop and I had too much going on at 10 AM PST to be able to tune in to the last presentation. I am interested to find out more about the oils before I jump in to purchase and start a business. Thank you.

Hi Karen,
Yes, absolutely! You can look for some events at different times this month. I've been a bit challenged with Skye because she gets up so early and therefore I have to go to be crazy early but later this month I will be in Pacific time for a few months so that will help tremendously. I also just invested in an amazing webinar system so you can expect recorded webinars as well.
Look forward to connecting with you and helping you on your journey.
