I know it sounds cliche, but a salad is a great option for lunch or dinner for your Meatless Monday. (Because I know most of you aren’t like me and don’t want salad for breakfast. :)) I tend to make salads by mixing up the contents of my produce drawer and throwing in some beans, nuts, and seeds. If you are looking for something a little different, this Roasted Garlic & Tomato Lentil Salad is amazing. Taco Salad is a great option that even picky kids love.
2. Frozen Entrees
