Leftover Mashed Potato Waffles

Mashed Potato Waffles, ready in a snap, are a clever way to use your leftover mashed potatoes. They're crispy outside, soft inside, loaded with taste, and made fun with your waffle iron.

You Will Need

Preheat your waffle iron to medium-high. Place the mashed potatoes, cheese, bacon, chives, eggs, butter, flour, baking powder, and salt in a bowl.

Stir well to combine.

Brush your waffle iron with melted butter or oil.  Spread the potato mixture into each waffle square.

Close the lid and cook for 10 to 12 minutes, until golden brown.

Transfer to a wire rack or plate, and let cool for a few minutes.

Top with sour cream, chives, bacon, crushed red pepper flakes, and shredded cheese.
