Tomato Quinoa Pilaf

This Tomato Quinoa Pilaf is such a simple quinoa recipe that you will be surprised by how delicious it is!  It makes a great vegetarian and gluten free side dish or a light lunch or dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped shallots or red onion
  • 1 teaspoon minced garlic
  • 2 cups quinoa rinsed
  • 2 ¾ cups vegetable broth
  • ½ teaspoon sea salt
  • ¼ teaspoon cayenne
  • 1 ½ cups grape or cherry tomatoes quartered
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons chopped fresh thyme
  • 2 tablespoons lemon juice
  • 6 ounces feta cheese crumbled

Instructions

  • Heat oil in a saucepan over medium heat. Add onions or shallots and cook for 5 minutes. Add garlic and cook another 30 seconds.
  • Add quinoa to the saucepan and sauce for two minutes. Stir in broth, salt and cayenne pepper.
  • Bring to a boil and then reduce heat to a simmer. Cover and cook for 18 minutes, until all liquid is absorbed.
  • Remove from heat and allow to sit covered for another five minutes.
  • Stir in tomatoes, parsley, basil, thyme, lemon juice and feta and serve warm.
