Ingredients

  • ½ cup grass-fed butter softened
  • ½ cup crumbled blue cheese
  • 1 tablespoon minced rosemary
  • 4 cloves garlic minced
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground pepper
  • 24 ounces grass-fed Filets
  • Salt and pepper to taste

Instructions

  • In a medium bowl combine butter, blue cheese, rosemary, garlic, salt and pepper. Use your hands to form into a log. Cover and refrigerate for at least 45 minutes.
  • Heat a grill pan to high heat. Brush the steaks with avocado oil and season to taste with salt and pepper. Grill to desired doneness, about 4 minutes a side for medium-rare. Transfer to a plate and top with butter. Allow to sit for five minutes and serve.
