Blue Cheese, Spinach and Sun Dried Tomato Pizza (Gluten Free, Vegetarian)
This Blue Cheese, Spinach and Sun-Dried Tomato Pizza is anything but ordinary. With baby spinach, sun-dried tomatoes, garlic, blue cheese, Parmesan and walnuts this flavorful pizza is gluten free pizza at its best.
Place a pizza stone on the bottom rack of your oven and preheat to 425. Sprinkle parchment paper with corn meal and roll out pizza dough to desired thickness. Transfer crust to pizza stone and bake for 5 minutes. Remove from oven.
Increase oven temperature to 500.
Meanwhile sauté spinach in a medium skillet until wilted. Remove from pan and drain, pressing to remove excess moisture.
Scatter spinach, sun dried tomatoes, blue cheese, garlic, walnuts and parmesan on crust. Using a pizza peel, transfer crust to pizza stone. Bake for 10 to 12 minutes. Sprinkle with basil and serve warm.
