Ingredients

  • 1.5 cups cashews raw
  • 1.5 cups almonds raw
  • ¼ cup honey
  • 2 tablespoons unsalted butter melted (or Earth Balance)
  • 1 ½ tablespoons curry powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 2 teaspoons sea salt
  • ¼ teaspoon ground pepper

Instructions

  • Spray slow cooker with olive or avocado oil.
  • In a bowl whisk together honey, butter, curry powder, cumin, cayenne, salt and pepper.
  • Add cashews and almonds. Toss to coat. Transfer to the slow cooker and spread in an even layer. Cook on high for 1 hour. Reduce heat to low and cook for another hour, stirring every 15 minutes.
  • Line a baking sheet with parchment paper and transfer nuts. Allow them to sit for 1 ½ hours, until hard. Store in an airtight container for up to 7 days.
