Kid Friendly Gluten Free Veggie Pasta Salad

Ingredients

  • 8 ounces quinoa penne
  • 1 cup broccoli florets
  • 1 red pepper diced
  • 1 cup grape tomatoes quartered
  • 2 carrots julienned
  • 3 pieces Horizon® string cheese chopped
  • Dressing
  • ¼ cup red wine vinegar
  • ½ cup extra virgin olive oil
  • 3 tablespoons honey
  • 1 clove garlic minced
  • 1 tablespoon dijon mustard
  • 1 teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

Instructions

  • Cook pasta according to package directions, adding in the broccoli in the last 2 minutes of cooking. Drain and rinse with cold water. Transfer to a large bowl.
  • Add red pepper, grape tomatoes, carrots and string cheese to the bowl.
  • Make the dressing by combining vinegar, olive oil, honey, garlic, dijon, salt and pepper in a blender. Process until smooth. Toss with pasta and veggies and serve chilled or at room temperature.

Notes

To make this vegan, use a vegan friendly cheese.
