Cook pasta according to package directions, adding in the broccoli in the last 2 minutes of cooking. Drain and rinse with cold water. Transfer to a large bowl.
Add red pepper, grape tomatoes, carrots and string cheese to the bowl.
Make the dressing by combining vinegar, olive oil, honey, garlic, dijon, salt and pepper in a blender. Process until smooth. Toss with pasta and veggies and serve chilled or at room temperature.
