- 2 tablespoons avocado oil
- 1 onion chopped
- 1 small head red cabbage cored and sliced
- 1 teaspoon sea salt
- ¼ teaspoon black pepper
- ⅔ cup vegetable broth or chicken broth
- ¼ cup red wine vinegar
- 2 tablespoons honey
- Goat Cheese for serving (optional)
Heat oil in a large skillet to medium heat. Add onion and cook for 8 minutes. Add sliced cabbage, salt and pepper.
Cook for 2 minutes. Add broth, vinegar and honey and stir to combine.
Cook for 5 more minutes and then if necessary add more broth to the pan. Cook until the cabbage is tender, about another 15 minutes.
