Cheesy Quinoa Snack Bites

These Cheesy Quinoa Snack Bites are the perfect appetizer or a quick afternoon snack.

Ingredients

  • 2 cups cooked quinoa
  • ¼ cup quinoa flour or gluten free flour of choice
  • cup black beans drained and rinsed
  • ½ cup chopped onion
  • 1 package McCormick Gluten Free Taco Seasoning
  • 2 eggs
  • 8 ounces cheddar cheese cubed
  • Coconut or Avocado oil for cooking

Instructions

  • In a large bowl combine quinoa, flour, black beans, onion, and taco seasoning. Add eggs and stir well.
  • Form mixture into small balls around cubed cheese.
  • Heat oil over medium heat. Carefully add snack bites to hot oil. Cook about 5 minutes per side, until crispy and lightly browned. Drain on paper towels. Serve with Spicy Lime Dipping Sauce if desired.

Notes

Substitute cheese and eggs to make this vegan friendly.
