Ingredients

  • 1 lb plum tomatoes seeded and chopped
  • ½ cup cooked quinoa
  • ½ medium red onion chopped fine
  • 1 avocado peeled and diced
  • 2 jalapeño seeded and chopped
  • ¼ cup fresh cilantro chopped
  • 1 teaspoon minced garlic
  • 2 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon sea salt
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ¼ - ½ teaspoon chipotle chile powder

Instructions

  • Combine tomatoes, quinoa, red onion, avocado, jalapeño, cilantro, garlic, lime juice and olive oil in a bowl. Sprinkle with sea salt, cumin, paprika and chipotle chile powder and stir gently.
