Ingredients

  • 2 cups cooked quinoa
  • 4 cups fresh arugula chopped
  • 14 ounces artichoke hearts drained and rinsed
  • ¾ cup dried cherries or cranberries
  • 4 green onions chopped
  • ½ cup walnuts toasted and chopped
  • cup balsamic vinaigrette

Instructions

  • In a medium bowl combine quinoa, arugula, artichoke hearts, cherries, green onions and walnuts. Toss with vinaigrette and serve.
