Roasted Garlic Quinoa Patties

These egg-free Roasted Garlic Quinoa Patties are both vegan and gluten free. But don't let that scare you. These vegan quinoa patties are so packed with flavor and satisfying, no one will notice they are egg and dairy-free.

Ingredients

  • 2 cups cooked quinoa
  • 1 head garlic more to taste – I used 2
  • ¼ cup Quinoa Flour any flour will do
  • ¼ cup Daiya Cheese
  • ¼ cup Nutritional Yeast
  • ¼ cup chopped onion
  • ¾ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ½ cup parsley chopped
  • 2 tablespoons Chia Seeds mixed with 6 tablespoons warm water
  • ¼ cup Coconut Oil egg re-placer = 3 eggs

Instructions

  • Preheat oven to 400 degrees. Cut top of garlic off and place in a small baking dish. Drizzle with olive oil and salt and pepper to taste. Cover tightly with foil. Bake for 30 – 35 minutes. Allow to cool and squeeze garlic cloves from garlic head. Place in a large bowl and mash with a fork.
  • Meanwhile, mix chia seeds with water and stir well. Set aside.
  • Add cooked quinoa, flour, cheese, nutritional yeast, onion, sea salt, ground black pepper and parsley to the garlic. Stir until well combined and garlic is evenly distributed. Add chia seeds and stir well. Form into small patties using a tablespoon measure.
  • Melt coconut oil over medium low heat. (Make sure your pan is warm before you add the patties – depending on your stove this could take 5-10 minutes) Add patties and cook until a golden brown crust has formed. Flip and cook until brown.
