1 tablespoon olive oil 1 onion chopped 1 red bell pepper chopped 6 cloves garlic minced ¾ cup quinoa rinsed 1 ½ teaspoons chili powder 4 cups vegetable broth 1 ½ cups cooked black beans 1 can 1 cup grated carrots 1 cup corn 1 bay leaf ½ teaspoon sea salt ¼ teaspoon fresh ground pepper ¼ cup chopped cilantro 2 tablespoon lime juice For garnish: chopped tomatoes red pepepr and carrots
Heat oil over medium heat. Add onion and pepper and sauté for 5 minutes. Add quinoa, garlic and chili powder and sauté another 3 minutes.
Stir in broth, black beans, carrots, corn, bay leaf, salt, and pepper.
Bring to a boil. Reduce heat to medium-low and simmer covered for 20 minutes. Stir in cilantro and lime juice and garnish to serve.
