Ingredients

  • 6 eggs
  • ½ cup milk
  • ½ cup cottage cheese
  • 1 teaspoon garlic powder
  • ¼ teaspoon crushed red pepper
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 cup cooked quinoa
  • 1 cup cheddar cheese divided

Instructions

  • Preheat oven to 350 degrees. Prepare an 8 x 8 baking dish with cooking spray. (You may also use individual ramekins.)
  • In a medium bowl, whisk together eggs and milk. Stir in cottage cheese, garlic powder, red pepper, sea salt, and black pepper.
  • Add quinoa and half of cheddar cheese. Pour into baking dish and top with remaining cheese.
  • Bake for 30 minutes. If desired, brown the top by placing under a broiler for 2 or 3 minutes.

Notes

Make it Vegan: In place of eggs combine 2 cups of non-dairy milk with 1 cup of silken tofu, 2 tablespoons tahini, and ¼ cup nutritional yeast. Process well in your blender. Use vegan cheeses. Bake at 325 degrees for about 50 minutes.
