1 package Butternut Squash Green Giant Veggie Spirals 2 cups cooked quinoa 1 cup cooked black beans 2 ounces cheddar cheese shredded ¼ cup fresh salsa 4 large eggs 1 avocado sliced For serving: lime juice flakey salt, crushed red pepper, cilantro
Cook butternut squash according to package directions. Drain.
Divide quinoa, black beans, butternut squash, cheese and salsa among serving bowls.
Spray a skillet with avocado oil and fry eggs to desired doneness. Place on the top of the bowls.
Top with avocado and garnish as desired.
