24 ounces riced cauliflower 1 tablespoon butter 1 teaspoon minced garlic 14 ounces canned coconut milk ½ teaspoon sea salt ½ teaspoon fresh ground black pepper ¼ teaspoon crushed red pepper 1 tablespoon fresh lime juice 1- ounce unsweetened coconut flakes toasted (for garnish)
Melt butter in a large skillet over medium heat. Add cauliflower and cook for 5 minutes.
Stir in garlic and cook for an additional minute.
Stir in coconut milk, salt, black pepper, and crushed red pepper.
Cover and cook for 10 to 15 minutes, until most of the liquid is absorbed.
Uncover. Toss with lime juice and garnish with coconut flakes.
