Cook the chopped sausage in a large skillet over medium heat until cooked through. Set aside.
Spray a saucepan with cooking spray and heat to medium-high. Add onion and sundried tomatoes and cook for 8 minutes. Add quinoa and garlic and cook for 2 more minutes, stirring often.
Add broth, sea salt, and pepper and heat to simmering over medium-high heat.
Reduce heat to low and cover. Cook for 20 minutes. Remove from heat. Stir in parsley and sausage.
Allow to sit covered for 5 more minutes. Fluff with a fork and serve.
