Ingredients

  • 12 cloves garlic unpeeled
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 1 cup half and half
  • ¾ cup broth
  • 1 cup grated parmesan cheese
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Place the unpeeled garlic cloves in a large cast-iron skillet over medium heat.
  • Cook for about 12 minutes, stirring occasionally, until soft. Cool. Discard the skins and mash the garlic until it is soft.
  • Melt the butter in a saucepan over medium heat. Add the flour and cook for about 2 minutes. Gradually whisk in the half and half. Add the broth, and cook until thickened, about 6 minutes.
  • Reduce the heat to low. Add the garlic, parmesan, salt and pepper. Cook, stirring constantly, until the cheese is melted, about another 3 minutes.
