Ingredients

  • 16 ounces strawberries hulled and quartered (about 2 cups)
  • ¼ cup sugar
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract

Instructions

  • In a medium sauce pan, combine the berries, sugar, lemon juice, lemon zest and cinnamon. Stir to combine and place over medium-high heat.
  • Bring to a boil, and then reduce to medium-low.
  • Simmer, stirring occasionally, until the mixture is reduced by half, about 10 minutes.
  • Remove from the heat, and stir in the vanilla.
  • Let cool to room temperature, and pour into a glass jar.
  • Serve warm or chilled.
