Ingredients

  • 1 ½ cups cooked black beans drained and rinsed (1 can)
  • ½ red pepper diced
  • 1//2 medium red onion diced
  • 1 poblano pepper diced
  • 1 cup diced mango
  • cup chopped fresh cilantro
  • 1 tablespoon orange juice
  • 3 tablespoons rice vinegar
  • 1 tablespoon extra virgin olive oil
  • ½ avocado diced

Instructions

  • In a medium bowl combine black beans, red pepper, red onion, poblano pepper, mango and cilantro.
  • In a small bowl whisk together orange juice, rice vinegar and olive oil. Drizzle over black bean mixture and stir to combine.
  • Just before serving, toss with avocado.
