This easy to make Honey Mustard Quinoa Salad is packed with flavor! Crunchy celery and almonds paired with sweet cranberries make for a delicious vegan quinoa salad.
In a medium bowl combine quinoa, cranberries, celery, carrots and almonds. Toss with dressing and serve at room temperature or chilled. Drizzle with additional dressing as desired.
Dressing: Combine all ingredients in a small bowl and whisk until well combined.
Notes
I typically only use about half the dressing for this salad. I save the rest for leftovers!
