Add oil to a saucepan and heat to medium high. Add onion, and cook for 8 minutes. Add garlic and cook for another minute. Add vinegar and cook for 2 minutes. Add tomatoes, Italian seasoning, honey, salt and pepper.
Reduce heat to low and cook for 30 minutes. This pizza sauce is chunky, which I love. If you want a smoother sauce, process in a blender or with an immersion blender until desired consistency is reached.
