  • 1 tablespoon extra virgin olive oil
  • 1 onion diced
  • 1 teaspoon minced garlic
  • 2 cups quinoa rinsed
  • 2 teaspoons turmeric
  • 2 ½ cups vegetable broth
  • ¾ cup pomegranate seeds
  • cup walnuts toasted and chopped
  • 4 scallions sliced


  • Heat your oil in a medium saucepan. Add onion, garlic, and quinoa. Toast, stirring often, for 4 minutes. Add turmeric and vegetable broth.
  • Bring to a simmer, and then reduce the heat to low. Cover and cook for 20 to 25 minutes, until the liquid is absorbed.
  • Remove from heat and allow to sit covered for 5 to 10 more minutes.
  • Toss with walnuts and scallions and serve warm or at room temperature.
