Turmeric Quinoa with Pomegranates and Walnuts

- 1 tablespoon extra virgin olive oil
- 1 onion diced
- 1 teaspoon minced garlic
- 2 cups quinoa rinsed
- 2 teaspoons turmeric
- 2 ½ cups vegetable broth
- ¾ cup pomegranate seeds
- ⅓ cup walnuts toasted and chopped
- 4 scallions sliced
Heat your oil in a medium saucepan. Add onion, garlic, and quinoa. Toast, stirring often, for 4 minutes. Add turmeric and vegetable broth.
Bring to a simmer, and then reduce the heat to low. Cover and cook for 20 to 25 minutes, until the liquid is absorbed.
Remove from heat and allow to sit covered for 5 to 10 more minutes.
Toss with walnuts and scallions and serve warm or at room temperature.
