Chocolate Quinoa Pancakes

These delicious chocolate quinoa pancakes are a great sweet treat for breakfast.

Ingredients

  • ½ cup Greens powder
  • ½ cup almond meal
  • 1 ½ cups quinoa flour
  • 1 tablespoon honey
  • 1 teaspoon gluten free baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs beaten
  • ¾ cup buttermilk
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • Combine all ingredients in a blender and process until smooth. (You may also beat well by hand.) Allow to sit for 30 minutes to thicken.
  • Heat a griddle or pan to medium heat. Spray well with oil. Using a ¼ cup measure, drop batter until pan. When bubbles start to form flip. Cook for another 5 minutes, or until cooked through.

Notes

Use egg replacement to make this recipe vegan.
