1 tablespoon olive oil 1 pound chicken breasts cut into pieces 1 red bell pepper diced 1 package ALEXIA Cauliflower Risotto 1 head broccoli cut into florets ½ cup water ½ teaspoon sea salt ½ teaspoon fresh ground black pepper Parmesan cheese and parsley for garnish
Heat oil in a large skillet over medium high heat.
Add chicken, and cook until browned, about 8 minutes.
Add red pepper to the pan and cook for 3 more minutes.
Reduce heat to medium. Add cauliflower risotto, broccoli, water, salt and pepper to the pan. Cover. Cook for 8 minutes.
