Gluten-Free Chocolate Pie
Chocolate Pie is a universally loved dessert that is perfect for any occasion. This company-worthy treat takes less than 15 minutes of hands-on time to make and is rich and decadent.
- 3 ½ cups Cocoa PEBBLES™
- ½ cup butter melted
- 11 ½ ounce chocolate chips
- ½ cup salted butter softened
- ¾ cup packed light brown sugar
- 3 large eggs
- ½ cup gluten-free flour blend with xanthan gum
- 2 teaspoons vanilla extract
- Whipped cream for serving
Preheat your oven to 350 degrees F.
Place the cereal in a food processor and pulse to crush. Stir in the butter until the cereal is moist. Press the mixture into the bottom and up the side of a 9-inch pie plate.
Bake for about 16 minutes, until the crust is brown and crisp. Allow to cool.
Melt the chocolate chips in the top of a double boiler. Remove from heat and allow to cool slightly.
In the bowl of an electric mixer, beat the butter and brown sugar until fluffy. Add the eggs one at a time, beating to combine before adding in another.
Stir in the melted chocolate, flour, and vanilla extract.
Bake in a preheated oven for 20 to 25 minutes, protecting the edges for the last 10 minutes. Cool on a wire rack for 1 hour, and this chill for at least an hour before serving.
Serve with whipped cream.
