Gluten-Free Spritz Cookies
Gluten-Free Baking just got more fun thanks to these gluten-free butter spritz cookies. With just a few simple ingredients, you have got baked goods that are sure to make your holidays more fun.
- 1 cup butter room temperature
- ¾ cup sugar
- 2 ¼ cups gluten-free flour blend with xanthan gum
- ½ teaspoon salt
- 1 large egg room temperature
- 2 teaspoons vanilla extract
- Food coloring optional
In the bowl of a stand mixer, cream together the butter and sugar.
Add the flour, salt, egg, and vanilla extract.
Beat until just combined.
If using food coloring, add and beat until it is incorporated.
Refrigerate the dough for 1 hour.
Preheat the oven to 400° F.
Fill your cookie press with about ¼ of the dough, and press the cookies on an ungreased cookie sheet. (Use your cookie press according to the manufacturer's instructions.
Bake for 6 to 8 minutes - until the cookies are set but not browned.
Allow to cool on the baking sheet for 5 minutes, and then transfer to a wire rack to cool completely.
