Air Fryer Oatmeal Cookies

Allow me to introduce you to one of my all-time favorite cookies.  These Air Fryer Oatmeal Cookies are the perfect balance of crispy on the outside and soft on the inside. They are sweet, a little crunchy, and wildly delicious.

INGREDIENTS

– 1 cup all-purpose flour – ¾ teaspoon baking powder – ½ teaspoon baking soda – ½ teaspoon salt – ¼ teaspoon ground cinnamon – ¾ cup unsalted butter at room temperature – 2 tablespoons sour cream – 1 cup granulated sugar – ¼ cup brown sugar – 1 large egg – 1 teaspoon vanilla extract – 2 ½ cups old-fashioned oats

– In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.

– In the bowl of a stand mixer, beat together the butter, sour cream, granulated sugar, and brown sugar for 2 minutes.

– Add the egg and vanilla extract and beat on medium-low for about 30 seconds. – Reduce heat to medium-low, and add the flour mixture until just combined.

– Add the oats, and beat on low speed until they are incorporated into the cookie dough.

– Chill the dough for 30 minutes. (Optional, but recommended to minimize spread.) – Using a cookie scoop to measure out the dough and roll it into balls. Press each ball down using your fingertips.

– Preheat your air fryer to 300 degrees. – Line your air fryer with an air fryer liner and arrange the cookies in a single layer, being careful not to put them too close.

– Cook for 7 to 9 minutes, until the edges are lightly browned. – Allow to cool in the air fryer for about 5 minutes, and then transfer to a cooling rack to cool completely.
