Arugula Burrata Salad

about the recipe

This Arugula Burrata Salad is the ideal quick and effortless dish where every bite is a symphony of flavors and textures. This salad is crafted with vibrant ingredients like peppery arugula, sweet cherry tomatoes, crunchy red onions, and toasty walnuts, all enveloped by a tangy balsamic dressing. The star of the show? Creamy, dreamy burrata adds a luscious and indulgent touch to this simple yet sophisticated salad.

INGREDIENTS

– 6 cups baby arugula – 1 cup cherry or grape tomatoes halved – ½ red onion sliced thin – ⅓ cup walnuts toasted and chopped – ⅓ cup balsamic vinaigrette – 4 ounces burrata – Fresh basil leaves for garnish

– In a large bowl, combine the arugula, tomatoes, onion, and walnuts.

– Add the balsamic vinaigrette, and toss to coat.

– Top with burrata and fresh basil and serve immediately.

Tips and Tricks Dress it Up: When it comes to dressing, less is more. Start with a small amount of balsamic vinaigrette and add more to taste. You want to complement the flavors, not overpower them.

Toast those Walnuts: Toasting walnuts enhances their flavor and adds a delightful crunch to your salad. You can easily do this in a dry skillet over medium heat, just watch them closely to avoid burning. Serving Immediately: To enjoy the best texture and flavor, serve the salad immediately after dressing. If you're preparing ahead, simply add the dressing and burrata just before serving.

Make it Your Own: This is your salad, so feel free to customize it! Add some grilled chicken for protein, swap out the walnuts for almonds, or throw in some olives for an extra punch of flavor.  When in season, I like to add stone fruits like nectarines or peaches to this salad.
