INGREDIENTS

– 24 ounces salmon filets skin-on – 1 teaspoon Italian seasoning – 1 teaspoon garlic powder – 1 teaspoon sea salt – ½ teaspoon freshly ground black pepper – 2 tablespoons avocado oil

Press the salmon between paper towels to dry thoroughly. In a small bowl, stir together the Italian seasoning, garlic powder, salt, and pepper.

Season both sides of the salmon with the seasoning blend and allow it to sit at room temperature for 30 minutes, or proceed with the recipe immediately.

Heat the oil in a cast iron skillet over medium-high heat.

Add the fillets, skin side down.

Reduce heat to medium-low immediately. Press down with a fish spatula for 1 minute, and continue cooking for about 5 more minutes.

Flip, and cook for about 1 minute longer, until an instant-read thermometer registers 120° F for medium-rare. Allow to rest for 5 minutes before serving.
