INGREDIENTS

Dressing – ¼ cup extra virgin olive oil – 2 tablespoons apple cider vinegar – 2 tablespoons maple syrup – 1 tablespoon dijon mustard – ½ teaspoon sea salt – ¼ teaspoon freshly ground black pepper Slaw – 1 bunch kale – 1 tablespoon extra virgin olive oil. – 2 cups thinly sliced red cabbage – 2 carrots grated – 2 apples peeled and cut into matchsticks

– Combine the oil, apple cider vinegar, maple syrup, dijon mustard, salt and pepper in a jar or blender. 

– Process or shake to combine.

– Remove the kale from the stems and discard. Finely slice the leaves about ¼ inch thick.

– Put the kale in a large bowl and drizzle the oil over. Sprinkle with a little salt. Massage for 3 to 5 minutes.

– Add the cabbage, carrots, and apple.

– Pour the dressing over the slaw and toss to combine.
