15-Minute Strawberry Compote

INGREDIENTS

– 16 ounces strawberries hulled and quartered (about 2 cups) – ¼ cup sugar – 2 tablespoons lemon juice – Zest of 1 lemon – ⅛ teaspoon ground cinnamon – ¼ teaspoon vanilla extract

– In a medium sauce pan, combine the berries, sugar, lemon juice, lemon zest and cinnamon. Stir to combine and place over medium-high heat.

– Bring to a boil, and then reduce to medium-low.

– Simmer, stirring occasionally, until the mixture is reduced by half, about 10 minutes.

– Remove from the heat, and stir in the vanilla.

– Let cool to room temperature, and pour into a glass jar.

– Serve warm or chilled.
