Ingredients

  • 1 package Archer Farms Cilantro Rice
  • 1 package Simply Balanced Gluten Free Chicken Breast
  • 1 tablespoon olive oil
  • 2 tablespoons Market Pantry Taco Seasoning
  • 1 package Simply Balanced Pinto Beans
  • 8 ounces Market Pantry shredded cheese
  • 1 to mato chopped
  • 1 avocado sliced
  • For topping: Simply Balanced Salsa and Garlic Lime Sauce
  • Garlic Lime Sauce
  • ½ cup Market Pantry Sour Cream Greek Yogurt works too!
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon minced garlic
  • Juice and zest of 1 lime

Instructions

  • Cook rice according to package directions.
  • In a medium bowl drizzle chicken breast with olive oil and toss with taco seasoning to coat. Cook in a skillet over medium heat until cooked through, about 5 minutes per side. Remove from the pan. Add pinto beans to the pan and cook until heated through.
  • Divide rice between bowls. Top with chicken breast, pinto beans, cheese, tomato and avocado.
  • Drizzle with Garlic Lime Sauce and Salsa.
  • To make Garlic Lime Sauce, combine sour cream, garlic, lime juice, and zest in a small bowl. Whisk until combined.

Notes

Allow it to sit for an hour, or put it in the freezer for 15 minutes or so for the chocolate to harden.
