Slaw 1 bunch kale 1 tablespoon extra virgin olive oil. 2 cups thinly sliced red cabbage 2 carrots grated 2 apples peeled and cut into matchsticks
Combine the oil, apple cider vinegar, maple syrup, dijon mustard, salt and pepper in a jar or blender. Process or shake to combine.
Remove the kale from the stems and discard. Finely slice the leaves about ¼ inch thick.
Put the kale in a large bowl and drizzle the oil over. Sprinkle with a little salt. Massage for 3 to 5 minutes.
Add the cabbage, carrots, and apple.
Pour the dressing over the slaw and toss to combine.
