Veggie Quinoa Salad
Looking for a fast and easy way to fuel your day? This veggie quinoa salad is simple, but delicious! It is one of my go-to lunches, and infinately adaptable. Feel free to use whatever vegetables you have on hand.

Ingredients

cooked quinoa

radishes
cut into strips

tomato
seeded and diced

julienned carrots

julienned zucchini

julienned yellow squash

baby peas
fresh or thawed frozen

torn lettuce or kale

chopped red onion

balsamic vinegar dressing
more or less to taste, homemade or store bought
Instructions
Combine remaining ingredients in a large bowl. Toss with 3 tablespoons of dressing. Serve with additional dressing if desired.
Notes
Serves 4 as a side dish; 2 as a lunch.
