Ingredients

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Slaw

  • 1 bunch kale
  • 1 tablespoon extra virgin olive oil.
  • 2 cups thinly sliced red cabbage
  • 2 carrots grated
  • 2 apples peeled and cut into matchsticks

Instructions

  • Combine the oil, apple cider vinegar, maple syrup, dijon mustard, salt and pepper in a jar or blender. Process or shake to combine.
  • Remove the kale from the stems and discard. Finely slice the leaves about ¼ inch thick.
  • Put the kale in a large bowl and drizzle the oil over. Sprinkle with a little salt. Massage for 3 to 5 minutes.
  • Add the cabbage, carrots, and apple.
  • Pour the dressing over the slaw and toss to combine.
