These Southwestern Vegetarian Chicken Sliders are everything you want out of an appetizer tucked neatly into a portable sandwich. We start with a toasted slider bun and then spread it with seasoned mashed avocado. Top it with crispy veggie nuggets that are perfectly tender on the inside, juicy tomato, crunchy onion, and shredded lettuce. Finish it off with a pickled jalapeno for the perfect kick of flavor.

Ingredients

  • 8 ounces vegetarian chicken like Gardein, Raised and Rooted
  • 1 avocado peeled and pitted
  • 1 lime juiced
  • ½ teaspoon ground cumin
  • Salt and pepper to taste
  • For serving: sliced red onion, sliced tomato, pickled jalapenos, shredded lettuce, toasted slider buns

Instructions

  • Preheat your oven to 400° F. Line a baking sheet with parchment paper.
  • Arrange the "chicken" on the prepared baking sheet. Bake to 10 to 12 minutes, until heated through.
  • Meanwhile, mash the avocado flesh into a bowl and add the lime juice, cumin, salt, and pepper. Use the back of a fork to combine.
  • Spread the avocado mixture on the toasted slider buns.
  • Add the lettuce to the bottom buns.
  • Top with veggie chicken, tomato, red onion, jalapeno, and the top bun.
