Ingredients for Making Southwest Veggie Chicken Sliders
Raised & Rooted Nuggets: Raised & Rooted Nuggets are the best way I know to enjoy all the flavors of chicken while staying plant-based. Trust me. There is no sacrifice here.
Avocado: If you can't find a good avocado, pre-packaged guacamole would work in place of the avocado mixture.
Garlic: Fresh minced is best here, but ½ teaspoon of garlic powder may be substituted if you prefer.
Seasonings: I like the punchy flavor that cumin lends. Smoked paprika is also an excellent addition. Adjust the salt and pepper to your personal preference
Fixings: Red onion, tomato, pickled jalapenos, and shredded lettuce are all great additions.
Slider Buns: To make vegan chicken sliders, make sure you choose a vegan bun.
How to Make Veggie Chicken Sliders
First, start by cooking your Raised & Rooted Nuggets according to package directions.
You can use regular or spicy, depending on just how much heat you want.
While your veggie nuggets are cooking, make the avocado spread by combining the avocado, lime juice, cumin, salt, and pepper. Mash until it is spreadable.
Spread the avocado mixture on toasted slider buns.
Add the shredded lettuce to the bottom of the buns, and then top with the Raised & Rood Nuggets, tomato, red onion, jalapeno, and the top bun.
Southwestern Vegetarian Chicken Sliders
1 package (8-ounces) Raised & Rooted Nuggets
1 avocado, peeled and pitted
1 lime, juiced
½ teaspoon ground cumin
Salt and pepper, to taste
For serving: sliced red onion, sliced tomato, pickled jalapenos, shredded lettuce, toasted slider buns
Preheat your oven to 400° F. Line a baking sheet with parchment paper.
Arrange the Raised & Rooted Nuggets on the prepared baking sheet. Bake to 10 to 12 minutes, until heated through.
Meanwhile, mash the avocado flesh into a bowl and add the lime juice, cumin, salt, and pepper. Use the back of a fork to combine.
Spread the avocado mixture on the toasted slider buns.
Add the lettuce to the bottom buns.
Top with Raised & Rooted Nuggets, tomato, red onion, jalapeno, and the top bun.
