Air Fryer Ribeye Steak with Compound Butter

I didn’t expect an air fryer ribeye to taste this good. The crust was perfect. And the center? A rosy, buttery dream. It’s everything my three kids love about steakhouse nights, but easy enough for a Tuesday night. The air fryer locks in the juices so every bite melts a little. And the rosemary butter? It will make you stop and think "Wow, I did this!"

Ingredients

  • 1 ½ - 2 pounds ribeye steak
  • 1 tablespoon brown sugar
  • 1 ½ to 2 teaspoons sea salt or kosher salt 1 teaspoon per pound of meat
  • ½ teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper

Compound Butter

  • ¼ cup unsalted butter
  • ½ tablespoon chopped fresh rosemary
  • ½ teaspoon sea salt

Instructions

  • Pat the steaks dry. In a small bowl combine the salt, brown sugar, garlic powder, black pepper and cayenne pepper.
  • Coat the steak with the seasoning blend. Place on a wire rack set on top of a baking sheet. Let sit at room temperature for an hour, or refrigerate for up to 24 hours. If refrigerated, let sit at room temperature for 30 minutes to an hour before cooking.
  • Meanwhile, combine the butter, rosemary and salt in a small bowl. Stir well and then form into a log. Roll up in plastic wrap or parchment paper and refrigerate.
  • Preheat your air fryer to 400°F. Add a tablespoon of water to the bottom of it.
  • Add the steaks, and cook for 6 minutes. Flip, and cook for another 4 minutes for medium-rare, 6 minutes for medium, or 9 minutes for well-done. The actual time will vary depending on the size and thickness of your steak; use a meat thermometer to ensure the perfect cook and make sure you give thicker steaks a little extra time.
  • Remove the steaks. Slice the compound butter and place on top of the steaks. Tent with foil, and let rest for 5 to 10 minutes before serving.

Notes

Store leftover air fryer ribeye steak in an airtight container in the refrigerator for up to four days. Reheat your leftover steak in the air fryer.
