Buttermilk Marinated Grilled Chicken Nuggets

I didn’t expect these grilled chicken nuggets to be something I’d crave. The seasonings add a hit of spice that keeps things interesting, and honestly, they disappear faster than I can pull them off the grill. These grilled chicken bites have that perfect balance of char and juiciness — the kind of easy dinner you start making “just for the kids” and end up enjoying as much as they do.

Ingredients

  • 2 ½ pounds chicken breast or thighs cubed
  • 2 cups buttermilk
  • 1 tablespoon poultry seasoning
  • 2 teaspoons Old Bay seasoning
  • 2 teaspoons sea salt divided
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper

Instructions

  • Place the chicken in a shallow dish. In a large measuring cup whisk together the buttermilk, poultry seasoning, Old Bay seasoning, 1 teaspoon of salt, pepper, and cayenne pepper.
  • Pour over the chicken.
  • Refrigerate for at least 1 hour, or ideally, overnight.
  • Drain the chicken and pat dry. Sprinkle with the remaining teaspoon of salt.
  • Preheat your grill, grill pan, or Ninja indoor grill to medium-high, about 450°F.
  • Cook for 2 to 3 minutes per side, until cooked through.
  • Serve with your favorite dipping sauces.

Notes

Store leftovers in an airtight container in ther refrigerator for up to three days. Reheat on the stove top or air fryer for best results.
